Last night was special! The first salad with ingredients all from Baba's garden. Truly tastes better when it is grown in the backyard 💕

With this warm weather today, I had a craving for a super fresh summer salad. So, thats exactly what I did! ☀️ 🥗
The base of my salad is a simple spring mix and greek dressing. From there, I added cucumbers, peppers and watermelon. Top it off with some feta cheese, salt and pepper.
My little hidden tip is that I dress my salad and then let it sit in the fridge for about an hour to let everything marinade — I think it tastes better this …

This past weekend, we celebrated my Fiancé's birthday a few days early by indulging in some Mexican food!
Had to share this Burritos de la Roqueta—filled with carnitas (slow-cooked pork) and served with ranchero sauce, melted cheese and pico de gallo, this was by far the perfect way to wrap up a long weekend.

Had so many tomatoes lying around, so I roasted them up with garlic and onions. Blended till smooth, simmered and added some cream! Homemade sauce!!

This morning’s breakfast! I have been adding cottage cheese to my scrambled eggs to make them creamier and add some more protein to keep me fuelled up!

I didn’t know this trick, if you want to pre-peel potatoes earlier in the day, put a slice of bread in the bowl of water and it won’t go bad!!

Tired of the same old mashed potatoes? Try adding in sauteed onions or shallots, I also add cream cheese with herbs and garlic flavour. Never any mashed potatoes left in this house!

Not dinner, but lunch earlier was a quick tuna salad! 🥗🐟
I add some pickle juice, corn, cucumbers and jalapeños
Slather it all over a bagel and it’s a winner!

Whipped up some tasty crepes this morning for breakfast! Very simple recipe and makes so many!
1 cup of flour
1-2 tablespoons of sugar depending on if you are making sweet or savoury crepes
A pinch of salt
1 egg
1/2-1 cup of milk (you have to eyeball it to get the right consistency)
A splash of water to thin out the batter
The consistency should be runny, thinner than a pancake!
Spread thinly on a hot, buttered pan and flip! …
