I was in the mood for something fresh today! So, naturally I had to make some salsa to go alongside my breakfast. It is a simple recipe, and very easily adaptable to personal taste!

In mine I added:

Half of a cucumber, sliced ๐Ÿฅ’
Half a red onion, roughly chopped ( I love onion, so I want to taste it!)๐Ÿง…
A whole ripe tomato ๐Ÿ…
A full jalapeรฑo - with some of the seeds scraped away but most of them still in the salsaโ€” I love the heat, but this can be adjusted or taken out entirely. ๐ŸŒถ
And a can of corn ๐ŸŒฝ

You could also add herbs like cilantro to bring even more flavour in, I did not have any on hand today so I left it out ๐Ÿ˜Š

The "Dressing" I made was super simple
1 lime, juiced straight into the jar
1 tbsp of salt seasoned in layers throughout the veggies
1 tsp of sugar to bring out some more flavours
A couple shakes of red chilli pepper flakes for more heat!

My favourite part of making these in jars is throwing the lid on and shaking them up!

The longer you can let it sit in its juices, the better! But good luck resisting this once you start!

It was delicious and did not last very long! ๐Ÿ˜‚
